Cheesy Ranch Smashed Potatoes

1 pound small potatoes

2 tablespoon olive oil

½ tablespoon salt

½ pound Italian sausage

Sea salt to taste

Pepper to taste

½ cup shredded cheddar

Parsley flakes for garnish

Clean potatoes before cooking. Preheat the oven to 425 degrees. Add potatoes to a large pot of water with salt. Bring to a boil until tender (about 15 minutes). Once you can pierce with a fork, remove potatoes from water and pat dry. Line them on a greased baking sheet and carefully smash each potato. Try to keep the bottoms intact. Generously coat the potatoes with olive oil and season with salt and pepper. Bake for 30 minutes. On the stovetop, fully cook and brown the ½ lb of Italian sausage. Once finished, set aside.

When the potatoes are finished baking, remove and drizzle with shredded cheddar, as well as evenly distribute the cooked sausage. Bake for another 2 minutes to melt cheese. Drizzle with ranch dressing. Garnish with parsley flakes.
