Uncle Achilles Greek Dressing
1 cup coarsely chopped figs
2 tbsp brandy
4 pitas, sliced into strips
3 cups Italian bread cubes
1 tsp minced garlic
1⁄3 cup butter
1 tsp thyme
½ tsp rosemary
1 cup chopped onions
½ cup chopped walnuts
1 – 1¼ cups chicken broth
Combine figs and brandy. Set aside.
Place pita bread strips and bread cubes on baking sheet. Set aside.
In a large skillet, sauté garlic in butter one minute.
Remove 2 tablespoons of the melted butter over the bread (leave the rest of the butter in skillet); sprinkle seasonings over bread and toss. Bake 15–20 minutes, until bread is toasted.
Meanwhile, cook onion until tender in reserved butter.
In a large bowl, combine bread mix, fig mix, cooked onion mix and walnuts. Add enough chicken broth to moisten; toss gently.
Spoon into a 1½-quart baking dish that has been sprayed with cooking spray. Bake uncovered at 350 degrees for 40 – 45 minutes or until bread is heated through.
