Mom’s Banana Cake
When you have those ripe bananas that no one will eat, try my mom’s banana cake. You can just sprinkle it with powdered sugar or coarse sugar, or ice with a cream cheese icing. It’s a great dessert or an after-school snack.
1 box yellow cake mix
2 eggs
½ cup milk
1 tsp. baking soda
1 tbsp. oil
1 heaping cup mashed or coarsely chopped bananas
Grease and flour pan. Put all ingredients in a bowl. Beat 2 minutes on medium-high speed. Pour into pan or paper-lined cupcake holders Bake at 350 degrees. For a 9-inch pan, bake 30-40 minutes. For cupcakes, bake 15 minutes.
