Herb Glazed Turkey
1 turkey (16-18 lbs)
¼ cup olive oil or vegetable oil
2 tsp dried thyme
1½ tsp salt, divided
1¼ tsp pepper, divided
1 cup honey
1 cup corn syrup
¼ cup butter, melted
2 tsp dried rosemary, crushed
1 tsp rubbed sage
1 tsp dried basil
Brush turkey with oil and tie drumsticks together. Place turkey breast side up on a rack in a roasting pan.
Combine thyme, 1 teaspoon salt and 1 teaspoon pepper and sprinkle evenly over turkey. Bake uncovered at 325 degrees for two hours. In a small bowl, combine honey, corn syrup, butter, rosemary, sage, basil and remaining salt and pepper. Brush over the turkey.
Bake two hours longer or until a meat thermometer reads 180 degrees, basting frequently with pan drippings. Cover loosely with foil if turkey browns too quickly. Cover and let stand 20 minutes before carving.
