Garlic Parmesan Spaghetti Squash
1 spaghetti squash
1 ½ tablespoons unsalted butter
2 tablespoons minced garlic
½ cup shredded Parmesan cheese, plus some for garnish
Salt and pepper to taste
Preheat oven to 400 degrees Fahrenheit.
With a fork, prick squash all over to release steam. Place on baking sheet and bake for 1 hour or until you can easily pierce through skin.
Remove from oven and let squash cool until it can be handled. Cut the squash in half and scoop out just the seeds. With a fork, pull the strands away from the skin.
Set aside in a bowl.
In a skillet over medium-low heat, melt butter. Add garlic until fragrant. Add squash and stir to combine. Add cheese, salt and pepper.
