SAP Salad
8 cups baby spinach leaves
½ cup pumpkin seeds
2-3 avocados (peeled, cored and sliced)
2 tablespoons olive oil
1 lime, zested and juiced
½ teaspoon salt
Put the first three ingredients in a salad bowl. Mix the olive oil, lime and salt and whisk together. Pour over salad. Toss, being careful not to smash the avocado slices. You can also use a store-bought creamy cilantro dressing if you prefer.
