Crockpot Beef Barley Soup
1 lb stew beef, cut into small cubes
¾ cup barley
3 carrots, diced
3 ribs celery, chopped
1 medium onion, chopped
1 bay leaf
6 cups beef broth
In a crockpot, combine all ingredients. Stir. Cook on low 6 to 8 hours. Salt and pepper to taste.
I have also browned a pound of hamburger and used that instead of stew meat.
I love to serve cornbread muffins with this barley soup.
