
Honeyed Sweet Potato Biscuits
2 cups flour
1 tbsp baking powder
½ tsp salt
¼ cup shortening (I like butter shortening, but either will do)
1 tsbp grated lemon peel
1 tbsp orange peel
3/4 cup mashed, cooked sweet potato
¼ cup honey
½ cup (about) milk
Preheat oven to 400 degrees.
In a large bowl, mix flour, baking powder and salt. Add orange and lemon peel, sweet potato and honey. Mix well and add enough milk to make a soft, not sticky, dough.
Turn out onto floured board and knead 3-4 times. Pat to 1 inch thickness. Cut out 2 ¼-inch rounds. Place onto ungreased cookie sheet. Bake in preheated oven 15 to 18 minutes until lightly browned. Serve with butter.
